Caballito Cerrero is a Tequila company founded in 1950 by Don Alfonso Jimenez Rosales. It is considered one of the top Tequila distilleries in the world. They’re committed to producing Tequila the traditional way and that sometimes means they butt heads with the Consejo Regulador del Tequila (CRT). For this reason, they label their traditionally produced Tequilas as Destilado de Agave. The agave are cooked in a brick steam oven, milled in a double pass mill, fermented for 7 days in open stainless steel tanks with both wild and proprietary yeast, and distilled in stainless steel and copper. It is aged for 9 months in American Oak.
