Description
Paranubes Rum is an artisanal aguardiente de caña produced in the rugged Sierra Mazateca of northern Oaxaca. Hidden deep in mountain valleys, the organically grown cane fields date back hundreds of years to not long after cane arrived in Mexico.
Maestro Jose Luis Carrera is a third-generation producer, whose grandfather founded his community of Rio Tuerto, home of Paranubes. He has created a truly unique rum, with a rich body and notes of overripe fruit, and savory accents of nightshade and sea air.
Raw Material: Fresh-pressed cane juice
Cane Varietals: Caña Criolla, Caña Morada/Negra, Caña Dulce, Caña Dura
Elevation: 3,000 – 5,000 ft. (cane fields), 3,600 ft. (distillery)
Fermentation: Open fermentation blend of fresh up to four months old juice. Pinewood vats. No water added.
Yeast: Ambient
Distillation: Single distillation. Copper hybrid still with a six-plate column on a 550-liter pot. Runs separated by day and by proof.
Cuts: Cuts taken at 85°, 80°, 65°, 20°, & 5° Cuts blended together and bottled by hand at 54°.
Bottling: No water added.
Aging: Unaged
