Description
This rye whisky from Sheringham Distllery (then in Sooke, now in Langford) was distilled on February 28th of 2020, and put into barrel at 53.7% ABV. It stayed in that barrel until May 14th, 2024 when it was dumped and bottled at 54.9% ABV, having increased in strength during that time due to warehouse microclimates.
The whisky was distilled from a base of 50% rye, 40% wheat, and 10% malted barley, with the latter bit being sourced from Phillips Maltings here in Victoria. It has a wonderful spice tamed by sweetness and a relatively round and easy-going palate for something bottled at nearly 55% ABV, versus the usual 46% used by Sheringham for their in-house whisky releases.
A great option for fans of American and Canadian Rye whiskeys or cask-strength Bourbons, it’s sweet with heat but in a pleasing and approachable way.
The cask filled 198 bottles, one of which was sent to The Palms Restaurant here in the Hotel Rialto to allow folks a place to try it, and especially for hotel guests to have an option for a local whisky to enjoy during their stay.
The bottles won’t last forever, but you can buy ’em while supplies last.
