Description
The “Eclipsia” is a Brut cuvée that is born from the union of three different vintages, which, once assembled by Vincent Couche, mature for three years on bottled yeasts. This is a Champagne whose final cut shows a predominance of pinot noir on chardonnay, whose grapes grow according to certified biodynamic farming practices. In the cellar fermentation takes place spontaneously, and the fermentation takes place in the bottle, as is the rule for the production of the champenoise method. A French bubble in which “harmony” is the word that is the basis of the tasting, where freshness and aromatic complexity coexist giving rise to a classy product.
